Sole with tomato butter

  • 2 soles
  • 150 g salted butter
  • Small dash of olive oil
  • Flour
  • Pepper and salt
  • 2 oranges
  • 50 ml passata
  • 1 clove of garlic
  • 75 g sun-dried tomatoes
  • 20 g basil
  • 100 g arugula
  • French fries

Instructions

  1. Season the fish with pepper and salt, coat it with flour.
  2. Melt the butter, add a bit of oil to prevent the butter from burning, and fry the fish until golden brown for about 3 minutes on each side.
  3. Segment the oranges.
  4. Cook the French fries.
  5. Remove the fish from the pan. Add the garlic, passata, and sun-dried tomatoes, and cook for another 30 seconds. Pour this mixture over the fish.
  6. Garnish with the orange segments and basil.
